Assessment of obtaining sunflower oil from enzymatic aqueous extraction using protease enzymes

The aim of this work was to maximize the enzymatic aqueous extraction (EAE) sunflower seed oil using protease enzymes from evaluation various temperatures, pH and enzyme concentrations, a Box-Behnken experimental design. effect thermal pre-treatment seeds on free yield (FOY) quality also determined. In range adopted, lower temperature (40 °C) provided higher FOY values, as well intermediate (8.00) maximum concentration (9% v/v). Thermal an increase in initial times (60 180 min) decreased time 4 3 h obtain highest value (~16%). fatty acid composition oils obtained showed predominance oleic (~47.5%) linoleic acids (~39.5%). total phytosterol content samples hardly affected by heat seeds, while profile, tocopherol oxidative stability were not altered.
